Black Fruits Plus Allspice -Elegant Sunday Dinner Wine!

Wine selection can be tricky,but Jim Truswell graciously shares his wine notes and pairing suggestions with our readers on a regular basis. Today!s article highlights a delightful wine which Would make an elegant pairing for a Sunday dinner,

Once in a while I will open a bottle from my cellar that has reached its prime.This is a wine you will want to decant at the 10 year point.After all,wines are made to be enjoyed not collected. Where do I start with a wonderful example of the winemakers art?

The wine was wonderfully complex on the nose as it was being decanted. A promised balance of fruit and some minerality. From the first sip, you will note the full body with excellent mouth-feel. Next fully matured black fruit extremely well balanced with hints of allspice and/or cloves. Some wispy cedar notes follow. A wonderfully long pleasant finish.

Pairing: Prime rib, crown rib roast, rack of lamb

Recommendation: BUY

New Year's Resolutions - What Are Your 2012 Plans?

As we begin a new year, and resolutions are being made we tend to look within ourselves for changes we wish to make. I would like to offer a suggestion that involves reaching out to others, and helping to make a significant change in their lives. 
Several years ago, my grandmother was residing in a nursing home. I visited regularly and assisted with her meals. She had been diagnosed with Alzheimer's. We would often sit in her room listening to the Charley Pride CD I had found for her. Remarkably, she could remember some of the words. Sadly, many of the other residents did not have regular visitors, and her room became a place where a few ladies would gather. Most nursing homes and hospitals have friendly visiting programs, this is a great way to get involved.
This past year, I became aware of a Friday morning Women's Drop-In at a church in downtown Toronto. Many of us who volunteer there have full-time jobs, but attend there before our regular work days. This is a drop in for vulnerable and street involved women of all ages. A hot breakfast is served, and it is a safe haven off the streets. We collect hygiene supplies, toiletries, and gently used clothing for distribution to those in need. This program would not be able to continue without the generous support of volunteers. Although our Fridays begin with a very early alarm clock, many of us will admit this is our favourite morning of the week.

Small Kindnesses Mean A Lot

While many of us may not have the time to make a significant commitment;  a small gesture such as shovelling a neighbour's sidewalk, running an errand for a senior, or babysitting for a busy friend, can make a difference in someone's day.

About three weeks ago, I was at my folk's house on Orange Corner's Road and I noticed this fair size, and I mean HUGE, spider on the door frame, between the screen door and the main door. I yelled over to Dad, and boyfriend, Mark, to come have a look see.
My father looked down and said: 'Hey look, it's carrying an egg sac!"

Ruth’s Quick Easy Rhubarb Cake!

  1. Lighting: Your image will turn out better if you turn off the flash. Try using natural light from a window, taking the plate outside, or if it's evening, see if you can direct some lamplight onto the food.
  2. Setting: Use different plates, napkins, placemats to showcase your various creations.
  3. Create Interest: Look for unusual angles, such as the close-up of the rhubarb shown here.
  4. Tell the Story: Take some shots during the various stages of preparation.
  5. Timing: Expect your baking/cooking to take longer with the stops and starts to wash hands to pick up the camera, to "pose" the food and to set the camera safely away from hazards such as flour dust, grease splatters, cake batter, etc.

Practising these tips can help give you a start towards creating mouth watering food photos. 
Ruth's Rhubarb Cake
Using rhubarb from your garden, or local farmer's market; this moist cake is delicious served on its own, or with Kawartha Dairy ice cream and rhubarb sauce.
Ingredients
1 ½ cups rhubarb cut fineRuth-Tait-Rhubarb-Cake See delicioous larger image in a new window
1 cup brown sugar
½ cup white sugar
1 egg
½ cup butter at room temperature
1 cup applesauce
1 tsp soda
½ tsp baking powder
1 tsp vanilla
2 cups flour
Directions
In a large bowl, cream sugars and butter, then add egg.
Stir in applesauce & vanilla. Next stir in baking soda, baking powder, and flour - don't over mix.
Add rhubarb - stirring just enough to distribute within batter.
Pour in prepared 9”x13”  pan.(I use PAM baking spray).
Mix 2 tbsp white sugar and 1 tsp each cinnamon & nutmeg and sprinkle over top.
Bake at 375F for 25-30 minutes until toothpick inserted in centre comes out clean .

Nutritious Nettles- Quick Easy Recipe!

Nettles are the 'go to' herb, for many a herbalist. Instead of saying take two aspirins and call me in the morning, your herbalist will say, 'Geeze, I can't really get a fix on what is wrong with you - take this nettles tincture,or tea, three times a day for the next 3 days and let me know how you feel.'

Nettle tea? What will you be ingesting? Large amounts of chlorophyll, vitamin C, A, some of the B's and loads of iron and calcium; all of which are very good for you. Nettles are just one of many plants which make a useful herbal tea,

Stinging Nettle Remedies

Nettles are prickly, they cause blistering and pain on contact, and most people think they are a very bad plant. I grow some in my medicinal wheel, and encourage them to grow around my barns.
If you come in contact with a nettle patch resulting in blistering, take a nettle tincture to help - it is a fantastic anti-histamine and will also do wonders for your drippy nose. You can also take an over-the-counter anti-histamine, or soak whatever body part in cool water with a few drops of lavender essential oil.

Cooking Nettles

For the brave and fearless heart, nettles can be exchanged for spinach in any recipe. Harvest nettles throughout spring and summer, wearing thick gloves and cutting the whole herb from as close to the ground as you can get. Strip leaves from stalks, and steam them in a small amount of water. Then strain, reserving water to drink as tea.
Add a little butter, pepper, parmesan cheese, garlic, and voila - a very healthy side dish - or, add some onions, tomatoes and mushrooms to the mix and toss it with pasta.
